THE BEST KETO/LOW CARB CHICKEN SOUP

INGREDIENTS

  • 2 Pounds Chicken cooked, chopped, I used a combo of chicken breast and thighs
  • 8 Cups Chicken Broth
  • 1 Sprig Rosemary fresh
  • 4 Sprigs Thyme fresh
  • 1 Bay Leaf
  • 4 Cups Cabbage shredded
  • 2 Tablespoons Butter
  • 1 Cup Onion chopped
  • 1 Cup Celery chopped
  • 1 Cup Carrots chopped
  • 4 Cloves Garlic

INSTRUCTIONS

  1. In a large pot, melt butter over medium heat.
  2. Add chopped onions, celery and carrots and cook for about 5 minutes, until veggies begin to soften.
  3. Add garlic and cook for 1 minutes, stirring to ensure it doesn't burn.
  4. Add cooked chicken and give the ingredients a stir.
  5. Add chicken broth, rosemary, thyme and bay leaf.
  6. Bring contents to a boil, then reduce heat to a simmer and cook for 10 minutes uncovered.
  7. Add shredded cabbage, stir, and cook for an additional 10 minutes.
