KETO EGGS BENEDICT CASSEROLE WITH EASY HOLLANDAISE SAUCE

Ingredients
For the bottom biscuit layer:

  • 2 Eggs
  • 1/3 cup Shredded Mozzarella Cheese
  • 1/4 cup Sour Cream
  • 2 cups Almond Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 4 tbsp Butter Cold, and cut into small cubes

For the toppings:

  • 1 lb Cubed Ham fully cooked
  • 8 Eggs
  • 3 Egg Whites Reserve the yolks for the Hollandaise
  • Salt and Pepper to taste

For the Easy Hollandaise:

  • 3 Egg Yolks Reserved from toppings
  • 1 tbsp Lemon Juice
  • Dash Cayenne Pepper optional
  • 10 tbsp Butter Melted and hot
  • Salt to taste

Instructions

  1. Preheat the oven to 350 degrees and grease a 7×11″ baking dish with non-stick spray or butter. 
  2. In a large bowl, combine the almond flour, baking powder, and salt. Then, cut in the butter using a pastry knife, two butter knives or a food processor.
