Keto Spinach Pie

This recipe is super, super easy! I mean, it’s not even really a recipe. I have no idea where my mom got the recipe (there has to be one, she doesn’t not use recipes!), but it was ‘on the regular’ in my house growing up. Now that we are adults, we still request this!

  • 1 tsp black pepper
  • 1 tsp salt
  • 1, 16 ounce container of cottage cheese
  • 2 boxes frozen, chopped spinach
  • 2 cups shredded cheddar cheese
  • 6 eggs, beaten

Keto Spinach Pie

  1. Preheat oven to 375˚
  2. Squeeze water from thawed chopped spinach.
  3. In large mixing bowl, combine spinach, cottage cheese, cheddar cheese, eggs, and salt & pepper.
  4. Pour into baking dish (8x8 works well!) and bake 30 minutes at 375˚, or until set in the center and golden brown on top.
