Breakfast Burritos

Breakfast Burrito is a quick and easy breakfast made with bacon, eggs, salsa. cheddar, and avocado, wrapped in a flour tortilla and ready in under 15 minutes!

INGREDIENTS
  • 1 avocado diced
  • 1/2 cup pico de gallo
  • 1/2 cup sharp cheddar shredded
  • 1/4 teaspoon coarse ground black pepper
  • 1/4 teaspoon kosher salt
  • 4 flour tortillas burrito sized
  • 8 large eggs whisked well
  • 8 ounces pork breakfast sausage


Breakfast Burritos

INSTRUCTIONS
  1. Add the pork sausage to a large cast iron skillet on medium heat and cook through crumbling it up until no longer pink then remove from the pan.
  2. Add in the eggs and cook, scrambled, until just set, about 2-3 minutes then remove from the pan and season with salt and pepper.
  3. To assemble the burritos layer the tortilla first then the cheese, eggs, sausage, pico de gallo and finally the avocado before folding in the sides and rolling closed.
